Macaroni and Cheese

8 oz wheat pasta
1/2 cup low fat cheddar cheese

2 cups Cheese Sauce (see below)

Cook pasta according to package instructions. Combine cooked pasta with Cheese Sauce. Place into oven-proof casserole dish, top with shredded cheddar cheese and bake until cheese is melted and slightly browned.

Cheese Sauce
2 sweet potatoes, chopped
2 large carrots, peeled and sliced into thick chunks
4 tbsp water

1 cup skim milk
4 oz fat-free cheddar cheese
2 oz Parmesan cheese

In a medium pot, cover carrots and sweet potatoes with cold water and boil for about 20 minutes until the potatoes, and especially the carrots, are very tender. Drain the potatoes and carrots and put them in the bowl of the food processor with two tablespoons of water. Puree on high until smooth; no pieces of carrots or potatoes should remain. Add the remaining ingredients and puree until smooth.
